Vineyard: Rowton Vineyard
Grown on the red sandy soils over the local Cardeston Rock. The field name is Whiston, which is an old word meaning "white stone", and these white stones can be seen glinting in the soil. This is a very free draining site, with a sloped south westerly aspect. An established tree line to the South West helps to take the brunt of the prevailing winds. Whilst we are in the rain shadow of the Welsh Mountains, meaning we don't receive as much annual rain as they do just over the border.
Viticulture
The vineyard is planted to a cover crop containing 16 different plants, from clover, to vetch to ox-eye daisies. The undervine area is managed with an intervine mower. All pruning is done by hand, and the vines are in their first year of being double guyot, we are following the Simmonit & Sirch gentle pruning method. All the vines go through shoot selection in the spring to limit yield and allow adequate space for the bunches. Leaf plucking is currently done by hand and all grapes are hand picked.
Vinification
These grapes were crush destemmed, before being pressed into a stainless steel tank. We use enzyme to help settle the juice, which is then racked and fermentation takes place in 100% stainless steel.
