Description
Dillions 2023 Bacchus truly reflects the warm Spring and the wet Summer of 2023. Large and abundant fruit at harvest time, retaining all the characteristics we love about the Bacchus grape. Typically aromatic on the nose with intense elderflower, green apple and freshly cut grass. This is a very light and refreshing representation of the varietal style. The fruit offers flavours of gooseberry, pineapple and citrus. The finish is mouth-watering and incredibly refreshing. Best served chilled.

Vineyard
The vineyard is in the High Weald on West Sussex. Situated on green sandstone with a silty/loam seam running for about a foot deep from surface level. The vineyard is directly south facing on a slope running down from 90 metres to 50 metres. The vines receive excellent drainage and full exposure to the sunshine as a result!

We are a certified sustainable vineyard and use minimum intervention strategies as far as possible.
Vinification
The fruit was whole bunch harvested by hand and pressed, destemmed, cold settled, tacked and inoculated. 20% of the pressed fruit was placed in new French oak barrels for 7 weeks and then placed back with the remaining press in stainless steel tanks
