Description
The wine presents a generous bouquet of ripe stone fruit, lychee, honeysuckle and a touch of cardammon with fresh citrus bursts. These exuberant aromas are brought together to create a wine with great clarity, a multilayered palate that goes deeper and deeper from initial minerality to succulent viscosity, offset by perfectly balanced acidity leading to a lomg finish.

Sustainable, regenerative agriculture with integrated pest management. 100% Alsatian Clone Pinot Gris, the grapes from our vineyard were handpicked, and pressed in October.
Vinification
100% Pinot Gris from an Alsatian grape varietal, from a unique block of grapevines in the vineyard the grapes were pressed in early October. After low temperature fermentation using both non Sacchromyces yeast and Sacchromyces yeast the wine was left in tank over winter but not allowed to go throughmalolactic fermentation to preserve the fresh acidity.
