Clayhill Vineyard: situated on the coastal peninsula of Crouch Valley and positioned between the rivers Crouch & Blackwater. The vineyard is south facing with clay soils and was planted in 2006.

Vinification
The grapes are whole bunch pressed straight to 5-10 year old burgundy barrels without settling. The wine undergoes indigenous fermentation for both primary and malolactic with frequent lees stirring.

10 months on gross lees in barrel. 25% new oak. Unfined and unfiltered
