Vineyard: Yew Tree Vineyard
Yew Tree Vineyard is located amongst the foothills of the Berkshire downs 10 miles south of Oxford. Situated 70m above sea level and planted in 2015. The site lends itself to hot summers with low rainfall and a warm, dry autumn.

Vinification
Whole bunch pressed to stainless steel tanks (50%) and 5-10 year old burgundy barrels (50%). Indigenously fermented, frequent lees stirring, full malolactic fermentation.
Maturation
12 months on gross lees prior to secondary fermentation in bottle. 2.5 years bottle ageing on lees. Undisgorged.
