Description
Aged on lees for 7 years, this is the second release of our multi-award winning Classic Cuvée 2014. Best served after being opened for 20 mins to appreciate the full autolytic complexity this wine delivers. This light, golden coloured wine delivers fresh, crisp orchard fruit with lemon, reflecting a low residual sugar level, that explodes on the palate through a constant lasting stream of vibrant fine bubbles, eventually giving way to toasted brioche secondary flavours. A long lasting finish of this drier, fresher style of Cuvée. Perfect on its own or with lighter food.

South facing, English climate. Total size 6 ha. Prevailing SW winds. Free draining soil with a good deposit of flint - soil warms quickly.
Uniquely historic site of the Roundhead encampment before the first Battle of Newbury, views of iron age forts, Highclere Castle, Newbury racecourse and Coombe Gibbet.

Viticulture
Emphasis on sustainability with as little chemical intervention as possible. Most weeding done mechanically or by hand; weather stations designed to warn on disease risk to minimise unnecessary intervention. No burning of pruning but mulched instead. Mechanical canopy management but hand leaf stripping as well as hand pruning and harvesting. Frost management comprises bougies, frostguards and frost fans. Vineyard mowing minimised to reduced soil compaction and flail mower used only to mulch prunings.
Vinification
Traditional method of secondary fermentation in bottle for more than 7 years, with over 9 months on cork. Chardonnay underwent malolactic fermentation. 3% of the wine was in barrel the rest in tank.
