Vineyard
All our Hampshire vines are planted on shallow chalk soils. Specifically, this wine is made from our small planting of Pinot Précoce, Pinot Gris and a particularly fine block of 779 Pinot Noir, with yields managed to ensure maximum ripeness.

Vinification
Minimal intervention. The Pinot Précoce and Pinot Gris were whole bunched pressed and co-fermented, achieving its very pale pink colour directly from the pressing, and this was blended with a particularly fine clone of 779 Pinot Noir. Specialist Rosé yeasts were selected for fermentation, to allow the fruit to be expressed fully and the delicacy retained. Fermentation took place in stainless tanks, and the wine saw full Malolactic fermentation.
