Description
Delicate pale pink with a delightful perfume of soft red fruits that showcase the purity of Pinot Noir and Pinot Meunier grown on chalk. The palate is fruit forward and carries the weight of a ripe vintage, with sweet red apple skins and super ripe orchard fruits on the finish. A classy and complex sparkler.

Vineyard
Located in the Test Wally, Hampshire, on shallow chalk soils, the three Black Chalk vineyards (Rivers, Levels and Hide) are perfectly situated for Sparkling wine production. All three are within 1 mile of the winery with a maximum height of 80m.

Viticulture
Across the three sites we have 36 rootstock and clone combinations planted for Pinot Noir, Pinot Meunier and Chardonnay. These are picked and processed separately to provide the maximum number of options at blending.
Vinification
Minimal intervention. Whole bunch pressing, cold settled, primary fermentation in stainless steel and oak barrels. Tirage in early spring and secondary fermentation in the bottle at 14c.
Maturation
Wines are aged for a minimum of 22 months on lees. Post-disgorgement, wines are held for 6 months on cork before being released.
