Black Chalk Classic 2021
Description
Black Chalk Classic is always Chardonnay led, both on the palate and the nose. This is no exception; it has a wonderful precise fruit focus, and the palate is textured and full. A small amount of malolactic fermentation to the base wines - the conversion of malic acid to lactic acid - creates weight and richness, whilst still allowing the wine to retain a fresh edge that is a hallmark for Black Chalk wines.

Vineyard: Hampshire
Located in the Test Rally, Hampshire, on shallow chalk soils, the three Black Chalk vineyards (Rivers, The Levels and Hide) are perfectly situated for Sparkling wine production. All three are within 1 mile of the winery with a maximum height of 80m.

Viticulture
Across the three sites we have 36 rootstock and clone combinations planted for Pinot Noir, Pinot Meunier and Chardonnay. These are picked and processed separately to provide the maximum number of options at blending.
Vinification
Minimal intervention. Whole bunch pressing, cold settled, primary fermentation in stainless steel and oak barrels. Tirage in early spring and secondary fermentation in the bottle at 14c.
Maturation
Wines are aged for a minimum of 22 months on lees. Post disgorgement, wines are held for P months on cork before being released.
