Description
This wine was fermented using an aromatic yeast at cool temperatures to highlight the fruit profile of this very ripe Kent Chardonnay. Fermented in stainless steel and a small amount of new oak before being blended to create a wine that is super fresh and vibrant with wonderful fruit, purity and balance.

Vineyard
Grown specifically for still wine by friends of ours in the North Kent downs. The fruit naturally reached 12% alcohol before being hand picked.

Vinification
Minimal intervention. Whole bunch pressed, and fermented in both stainless steel tanks and new oak Burgundy barrels. Specialist Chardonnay yeasts were selected for fermentation, to allow the fruit to be expressed fully and to compliment its fermentation vessel. Full malolactic fermentation was carried out to round out the wine.

at least 6 months of bottle age before release
