Crafted in small batches with a limited run of 3,500 bottles, Paragon showcases the delicate equilibrium between oak and fruit. Fermented predominantly in our 2,300 litre Oak Cask or 'Foudre' and meticulously blended, this Blanc de Blancs style stands as a testament to purity, with a subtle oak influence, impeccable balance, and a precise and polished finish.

Vineyard
Located in the Test Valley, Hampshire, on shallow chalk soils, the three Black Chalk Vineyards (Rivers, The Levels and Hide) are perfectly situated for Sparkling wine production. All three are within 5 miles of the winery with a maximum height of 60m. Across the three sites we have 34 rootstock and clone combinations planted for Pinot Noir, Pinot Meunier and Chardonnay. These are picked and processed separately to provide the maximum number of options at blending. This wine focuses particularly on Chardonnay clones 95, 121, 76 and 131.

Vinification
Minimal intervention. Whole bunch pressing, cold settled, primary fermentation in stainless steel and oak barrels. Tirage in early spring and secondary fermentation in the bottle at 14c. Wines are aged for a minimum of 26 months on lees. Post-disgorgement, wines are held for a minimum of 6 months on cork before being released.
