Description
A small batch Blanc de Noir with only 2,000 bottles produced. Inversion began as a project wine, and is made using a powerful Pinot Noir clone, 777, which thrives in rows 94-103 of our Upper Levels Vineyard. The resulting wine is captivating, the perfect example of a Hampshire Pinot; fruit-forward, well-structured, focused, and commands attention.

Located in the Test Valley, Hampshire, on shallow chalk soils, the three Black Chalk vineyards (Rivers, The Levels and Hide) are perfectly situated for Sparkling wine production. All three are within 5 miles of the winery with a maximum height of 60m. Across the three sites we have 34 rootstock and clone combinations planted for Pinot Noir, Pinot Meunier and Chardonnay. These are picked and processed separately to provide the maximum number of options at blending. This wine focuses particularly on Pinot clones 386, 521, 817 and of course 777.
Vinification
Minimal intervention. Whole bunch pressing, cold settled, primary fermentation in stainless steel and oak barrels. Tirage in early spring and secondary fermentation in the bottle at 14c. Wines are aged for a minimum of 26 months on lees. Post-disgorgement, wines are held for 6 months on cork before being released.
