Description
The wine shows typical aromas of cool climate Blanc de Blanc, fresh apples and buttery pastry. The palate is fresh yet shows development for maturation in bottle and has a toasty character from partial barrel fermentation which leads to a savoury finish with fine, persistent bubbles.

Vineyard: Kit's Coty
Kit's Coty vineyard is a 95-acre site situated about 50m above sea level on the Late Cretaceous chalk of the North Downs of Kent. The southerly aspect ensures the vines capture the sunshine all year long while the warm, free draining chalk soils provide the perfect terroir for producing well balanced, intensely flavoured fruit.

Vinification
Harvested by hand in September and October. 29% is fermented and matured in old French oak for 7 months, the rest in stainless steel. Undergoes full malolactic fermentation.
