Vineyard
Fruit is sourced from vineyards in Kent (95%) and Essex (5%). Grapes are grown predominantly on chalk, but also some clay soils.

Viticulture
Grapes are grown on single and double guyot pruning systems.
Vinification
Cool fermentation in stainless steel followed by full malolactic fermentation. A portion (1% 2010, 1% 2011, 7.5% 2013, 2.5% 2014) of this wine is from reserve stocks which has been stored in old barrels and tank which adds complexity and depth to the palate.
Maturation
Maturation on fine lees in tank for 6 months before bottling and a minimum of three years further ageing on lees in bottle.
