Description
This beautiful sparkling wine was made from ripe Chardonnay sparkling wine clones. The 2017 vintage was defined by a late spring frost, followed by a hot dry summer: resulting in lower yields of high quality fruit. The base wine went through 100% malolactic fermentation and a small proportion then was aged in old oak to allow bâtonnage, creating a creamy weight to the base wine prior to tirage. The wine is stored for a minimum of 45 months on the lees to promote an autolytic character with notes of brioche, almond and honey adding depth.
